Note: First you will need 1 large saucepan and one very large cast iron skillet. Place the large saucepan inside the cast iron skillet. This method is called heat diffuser as described in the beginning of the book. This will displace the heat evenly throughout your saucepan and is very important. Place the cast iron skillet on the stove then wipe down the inside of the saucepan with vegetable oil so as not to let large crystals form on the sides of your saucepan and ruin your mixture. Use a brush to wipe once in a while to clean crystals from sides of saucepan if they form.
